In December 2013, UNESCO declared Japanese cuisine an immaterial cultural heritage, due to its harmony with nature and its balance as distinguishing features.

It is repeatedly reported in the media, as well as by doctors and nutrition experts, that Japanese cuisine is among the healthiest in the world and contributes to longevity, as evidenced by data and facts such as the very long (healthy) life years of the Japanese population. There are now many restaurants in Europe where you can eat "Japanese" food, and supermarkets increasingly carry products with Japanese names, such as "Sushi," "Mochi," and "Teriyaki". However, there are significant differences between the food sold here as "Japanese food" and what people actually eat on a daily basis in Japan, especially at home with their families or in schools or cafeterias, which is rarely reported.

13.15 | Lecture: What Kind of Meal is Considered "Washoku" or Healthy in Japan? How is nutrition education carried out in a country where "health" is a mandatory subject in schools and where the daily school lunch is planned not only with calorie counts but also with specific measurements for salt and protein content? How is the fifth basic taste "Umami" (Japanese: うまみ) used in Japanese cuisine with natural ingredients? The lecture will explain that the term "washoku" refers not (just) to ingredients or individual dishes, but rather to an overall concept.

17.15 | World Dinner: With the knowledge gained in the first part, we are now ready to cook Japanese food, and rice is, of course, one of the most important ingredients. Along with the rice, we will prepare a seaweed salad and an "Umami"-rich miso soup with tofu and vegetables. Under the guidance of Sayuri Arafune, we invite you to an evening of hands-on cooking, enjoyment, and exchange.
